Well, butter my biscuits and tickle my curly tail!
Miss Sadie Mae’s been rootin’ around in the refrigerator again, and look what she found ~ a bowl of yesterday’s mashed taters just sittin’ there waitin’ for a second chance!
Now, don’t you go tossin’ those taters out! With a little cheese, a couple of pantry staples, and a hot skillet, we’re gonna turn those leftovers into crispy little golden treasures.
What You’ll Need
- 2 cups cold leftover mashed potatoes
- 1 large egg
- ½ cup shredded cheddar cheese
- ¼ cup all~purpose flour, plus extra if needed
- 2 tablespoons finely chopped green onions (optional)
- ¼ teaspoon garlic powder
- Black pepper to taste
- 2 tablespoons vegetable oil or butter for frying
Let’s Get Cookin’!
- Round up those taters! In a mixing bowl, combine the cold mashed potatoes, egg, cheese, flour, green onions, garlic powder, and pepper.
- Give ’em a good mix! Stir until everything holds together. If the mixture is too soft or sticky to shape, add a little more flour.
- Pat ’em into shape! Form approximately eight small patties, about ½ inch thick.
- Fire up that skillet! Heat the oil or butter over medium heat in a nonstick skillet.
- Let ’em get golden! Cook for approximately 3~4 minutes per side, until browned, crisp on the outside, and heated all the way through.
- Serve ’em up! Enjoy warm with sour cream, applesauce, or your favorite dipping sauce.
Sadie Mae’s Little Piggy Pointer: Cold, firm mashed potatoes work best. If yours are extra creamy or buttery, you may need another spoonful or two of flour to help those cakes hold together.
Makes: Approximately 8 potato cakes
Time: About 20~25 minutes
A little food-safety reminder: Use mashed potatoes that were refrigerated promptly and are no more than 3~4 days old. Heat the finished cakes thoroughly to 165°F.
A Little Wisdom From Miss Sadie Mae
“Just because somethin’ was good yesterday doesn’t mean it can’t be even better today! Sometimes all it needs is another chance and a little sizzle!” 🐷❤️
