🌽🐷 Hog~Wild Cornbread Supper Pie

Miss Sadie Mae has been rootin’ around the refrigerator again.

And apparently she found half a bowl of leftover meat, some vegetables nobody was particularly excited about seeing for the second night in a row, and a little cheese hanging around in the drawer.

Most folks might call that leftovers.

Miss Sadie Mae calls it:

INGREDIENTS. 🐷😂

This warm, hearty supper pie hides yesterday’s odds and ends underneath a golden cornbread topping. It’s inexpensive, flexible and particularly handy when you have a little bit of this and not quite enough of that.

Miss Sadie says that’s not a problem.

“Put it in the pan, honey. We ain’t holdin’ auditions.”

🛒 What You’ll Need

For the Slop

  • 2 cups cooked leftover meat ~ ground beef, shredded chicken, pulled pork or chopped roast all work
  • 1 tablespoon butter or oil
  • ½ medium onion, diced
  • 1 can (15 oz.) corn, drained
  • 1 can (15 oz.) beans, drained and rinsed ~ black, kidney or pinto
  • 1 cup leftover cooked vegetables, optional
  • 1 can (10 oz.) diced tomatoes with green chilies, lightly drained
  • ½ cup barbecue sauce
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

For the Cornbread Top

  • 1 box (8.5 oz.) corn muffin mix
  • 1 egg
  • ⅓ cup milk
  • ½ cup shredded cheddar cheese

🥄 Let’s Get Slop’in!

1. Heat things up.
Preheat oven to 375°F.

Lightly grease a 9-inch pie plate, 8×8~inch baking dish or similar casserole dish.

2. Start the slop.
Heat butter or oil in a large skillet over medium heat. Add onion and cook for about 3~4 minutes, until softened.

3. Give yesterday another chance.
Add your cooked meat, corn, beans, leftover vegetables and diced tomatoes.

Stir in barbecue sauce, chili powder and garlic powder. Season with salt and pepper.

Cook for about 5 minutes, stirring occasionally, until everything is hot.

4. Cheese it.
Spread the mixture into your prepared baking dish and sprinkle 1 cup cheddar cheese over the top.

Miss Sadie Mae says measuring cheese precisely is entirely optional.

She has yet to encounter a casserole ruined by an extra handful. 🐷

5. Make the cornbread hat.
Prepare the corn muffin mix with the egg and milk. Stir in the remaining ½ cup cheese.

Spoon the batter over the meat mixture. Don’t worry if every little spot isn’t covered.

We’re cookin’, not wallpaperin’.

6. Bake.
Bake uncovered for approximately 25~30 minutes, or until the cornbread is golden and cooked through.

Let it rest about 5 minutes before serving.

🐷 Sadie Mae’s Slop~It~Your~Way Ideas

This recipe is supposed to change depending upon what’s already hanging around your kitchen.

Got leftover taco meat?

Use it.

Half a cup of green beans from last night’s supper?

In they go.

A lonely little bowl of corn?

Come on down.

Leftover pulled pork?

Miss Sadie just started applauding.

You can also add jalapeños, bell peppers, extra cheese or a spoonful of sour cream when serving.

The whole point is:

USE WHAT YOU’VE GOT.

💰 Miss Sadie’s Penny-Pinchin’ Tip

Before grocery shopping, take five minutes and look through your refrigerator.

Not everything needs to become another full serving of the meal it originally belonged to.

A half cup of vegetables.

One chicken breast.

A little rice.

Half an onion.

A handful of cheese.

Those little bits can become ingredients for an entirely different supper instead of ending up in the trash.

Miss Sadie calls that:

Sometimes the best supper isn’t the one that required another trip to the grocery store.

It’s the one that looked at what was already there and said:

“We can make something outta this.”
