What You’ll Slop Together
- 2 cups cooked chicken, chopped or shredded
- 3 cups cooked potatoes, diced
- 1½ cups leftover vegetables, such as corn, peas, carrots, green beans, or broccoli
- ½ cup diced onion
- 1 tablespoon butter
- 1 can condensed cream of chicken soup
- ½ cup milk
- 2 tablespoons sour cream
- 1 teaspoon yellow mustard
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- 1 cup shredded cheddar cheese, divided
- 1 cup crushed buttery crackers, cornflakes, or leftover stuffing
- 1 tablespoon melted butter
Now Slop It All Out!
- Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
- Melt 1 tablespoon of butter in a skillet over medium heat. Slop in that diced onion and cook it for about 3 minutes, just until it begins to soften.
- In a large bowl, slop together the cooked chicken, potatoes, vegetables, and softened onion.
- In another bowl, stir together the cream of chicken soup, milk, sour cream, mustard, garlic powder, paprika, black pepper, and ½ cup of the cheese.
- Pour that creamy goodness over the chicken mixture.
- Now get in there and slop it all around until every potato, vegetable, and little piece of chicken is coated.
- Spread everything into the prepared baking dish. Sprinkle the remaining cheese over the top.
- Mix the cracker crumbs with 1 tablespoon of melted butter, then scatter them over the cheese.
- Bake uncovered for ‘bout 25-30 minutes, until the middle is hot, the edges are bubbling, and the top is golden.
- Let it sit for about 5 minutes before slopp’in it out. After slop’in, listen for folks askin’ ya for seconds!

“Don’t measure every leftover down to the last little pea. Slop in what you’ve got, give it a good stir, and make supper outta somethin’ that might’ve gone to waste!”
